CRUISE??

Well ever since we have been married,
I always ask Fielding random questions about himself.
You could never know your spouse well enough..
I asked him right after getting married where his dream place in the world is to visit..
He replied "JAMAICA."
Soo..
Me being the most amazing wife in the world,
decided recently that I would get us a cruise
around the Caribbean...
Fielding came home today and was all for it.
So looks like 18 days, we will be leaving the country,
and heading out to the Cayman Islands, Jamaica, and Cozumel, Mexico :)

I got so excited,
seeing how I couldn't even get fielding
to miss work long enough to go on a honeymoon. :)
(what a hard working man i have)
and so..
It is going to be our first trip alone, and non-working together..
EVER..

As I was resting my head to fall asleep tonight..
I couldn't help but think..
What if our cruise ship sinks?
What if pirates attack?
What if I have an emergency and cant go to a hospital?
AND THEN I DECIDED RIGHT THEN AND THERE..
i am the biggest worry wart ever..
What wife sits there and gets nervous about these things..
I should be excited for Fielding to live his dreams and
feel lucky enough I getta see it with him.
So..
I just have to swallow my fears,
and put a BIG smile on my face..
because in reality I know I am going to have a great time..

SO HERES TO OUR CRUISE..
A HONEYMOON AFTER BEING MARRIED FOR 14 MONTHS :)

Enchilada Bake Recipe

In Canada, was the first time I tried this..
and it has totally became one of our favorite recipes.
Enchilada Bake


1 pd. Ground Beef/Turkey ((I used beef, because I do not eat turkey))
1 onion
1 packet taco seasoning
1 can of corn (drained)
1 enchilada sauce (red) ((I used the hot kind because we like spice))
2 cans refried beans
round tortilla chips
cheddar cheese


In the picture above I have two bags of tortilla chips.
The round ones which the recipe calls for,
and then an extra bag to use when we are enjoying the yummy goodness :)


So, You start by cooking the ground beef and onion in skillet.

Then, follow the directions on the taco seasoning packet you have.


Mix together the drained corn and enchilada sauce.


Put a layer of tortilla chips down in casserole pan.


On top of the chips, put a layer of taco meat.


On top of the taco meat, put a layer of refried beans.


On top of the refried beans, add a layer of the corn and enchilada sauce mixture.


Repeat all the layers again.


I messed up here.. I did refried beans first, and then the taco meat..
but it doesn't change any taste :) So we are good if you make the same mistake :)



Add a layer of cheese on top.


Add a border of chips.


Put in oven at 350 F.
and wait for cheese to bubble.
Approximently 25-30 minutes.

We also top it off with Cholula Hot Sauce.
