CRUISE??

Well ever since we have been married,
I always ask Fielding random questions about himself.
You could never know your spouse well enough..
I asked him right after getting married where his dream place in the world is to visit..
He replied "JAMAICA."
Soo..
Me being the most amazing wife in the world,
decided recently that I would get us a cruise
around the Caribbean...
Fielding came home today and was all for it.
So looks like 18 days, we will be leaving the country,
and heading out to the Cayman Islands, Jamaica, and Cozumel, Mexico :)

I got so excited,
seeing how I couldn't even get fielding
to miss work long enough to go on a honeymoon. :)
(what a hard working man i have)
and so..
It is going to be our first trip alone, and non-working together..
EVER..

As I was resting my head to fall asleep tonight..
I couldn't help but think..
What if our cruise ship sinks?
What if pirates attack?
What if I have an emergency and cant go to a hospital?
AND THEN I DECIDED RIGHT THEN AND THERE..
i am the biggest worry wart ever..
What wife sits there and gets nervous about these things..
I should be excited for Fielding to live his dreams and
feel lucky enough I getta see it with him.
So..
I just have to swallow my fears,
and put a BIG smile on my face..
because in reality I know I am going to have a great time..

SO HERES TO OUR CRUISE..
A HONEYMOON AFTER BEING MARRIED FOR 14 MONTHS :)

Enchilada Bake Recipe

In Canada, was the first time I tried this..

and it has totally became one of our favorite recipes.
Enchilada Bake


1 pd. Ground Beef/Turkey ((I used beef, because I do not eat turkey))
1 onion
1 packet taco seasoning
1 can of corn (drained)
1 enchilada sauce (red) ((I used the hot kind because we like spice))
2 cans refried beans
round tortilla chips
cheddar cheese


In the picture above I have two bags of tortilla chips.
The round ones which the recipe calls for,
and then an extra bag to use when we are enjoying the yummy goodness :)


So, You start by cooking the ground beef and onion in skillet.

Then, follow the directions on the taco seasoning packet you have.


Mix together the drained corn and enchilada sauce.


Put a layer of tortilla chips down in casserole pan.


On top of the chips, put a layer of taco meat.


On top of the taco meat, put a layer of refried beans.


On top of the refried beans, add a layer of the corn and enchilada sauce mixture.


Repeat all the layers again.


I messed up here.. I did refried beans first, and then the taco meat..
but it doesn't change any taste :) So we are good if you make the same mistake :)



Add a layer of cheese on top.


Add a border of chips.


Put in oven at 350 F.
and wait for cheese to bubble.
Approximently 25-30 minutes.

We also top it off with Cholula Hot Sauce.

THIS LAST WEEK WAS..

AWESOMELY AWESOME.!

We started our trip with driving to New Orleans,
Which Ashley Pena took an hour out of her day to bring us.
Thank you so much for bringing us :)
and then we were on to
Traveling on a jet plane..

We flew from New Orleans, LA
to Denver, CO
to Salt Lake City, UT


After we got to Salt Lake City, We went to our car rental place..
Enterprise..
They ran out of cars.. kidding me.
So. They sent us over to National and said they would reimburse all the extra money..
With enterprise we were planning on $220
with national our total price was..
$497.20
kidding me?
anyways.. So we went to get our car and it was a..
2011 CHEVY CRUZE

Now.. if you know my husband
getting a chevy is like falling off the face of the earth
and dying in the freezing atmosphere.
A chevy was the worst thing we could of got.. and our luck was not that grand.
We are a TOYOTA family :)
So, we got in and started driving it.. IT HAD NO POWER.
if you drive one of these go test drive a scion tc.
thats the power we are used to..
and yes.. if you are wondering.. Toyota makes scions. :)
So anyways.. We went to Fieldings oldest sisters house
and visited with her family.
They are such a flipping cute family..
and their kids are amazing..

So after.. we got in the car picked up my sister and baby asher..
(which is the cutest baby in the whole wide world..)


and then headed down to Idaho..

My sister Katie and her family flew down from Arizona,
My sister Camille, Carson, and Calais came down from Utah,
and the rest live in Idaho..
We were a full family this holiday weekend.
Other than loosing TONS AND TONS of sleep..
WE HAD TONS AND TONS AND TONS OF FUN!

Oh.. and after searching many stores for my dream skull candy headphones..
We went shopping with my brother Casey..
and the place I didn't expect to find them..
ZUMIEZ
had them and they were their last skullcrushers.


Now all of you that dont know what the skullcrushers are..
they are headphones with the noise cancelation of course..
but they also have a battery pack on the cord.. and they have a built in amp..
So they boom in your ear.
FREAKING AWESOME.
now dont get me wrong.. They had different skullcandies everywhere I looked..
but not my awesome PURPLE ONES :)

During our busy busy scedule..
We went and saw my aunt and Uncle and cousins,
The Chapmans..
Played games..
Junk fooded out..
I always love to go over there because it is awesome to
have family time and just sit around playing games
with tons of laughs..

Fielding also got to visit some of his friends..
Which I think was much needed for him :)


The last day we were there
we finally got to spend time with Fielding's parents
since they were in Cali for Thanksgiving..
Also, we had to go to the dentist..
I got prescribed a pill that makes you totally out of it.
Seriously.. It was awesome.
So i went.. and had no cavities.. So I didn't even have to get prescribed anything..
but it was awesome while it lasted and for the rest of my life I am totally going to get more. :)
Oh.. and Fielding had 2 :) tehe..
I guess I am just a better brusher :)

So. We had to come home yesterday..



and while I was enjoying the beautiful scenery..
Fielding was..


SLEEPING OF COURSE.
LAMEO.!


and when we got here.. Codi Garrett one of our dome family friends
was there with a BIG smile to pick us up. :)
I am so glad we have awesome friends.

We got home.. Unpacked.. and fell asleep at 6..
After getting more than 12 hours of sleep,
I woke up..
and..
THIS IS WHAT YOU GUYS DONT KNOW..
remember.. I told you about two weeks ago that I got a job..
at the Italian Bowl..
Well.. I QUIT.
before I even started :D
Well.. I had such bad feelings about it.
I cant even begin to explain.
So..
When I got back I got a call from Applebees.
I went in for an interview..
AND BAM.
landed the job within the first 2 minutes.
SERIOUSLY..
I dont understand how people can have such a hard time finding jobs.
I always get a job, and I have never been turned down.
ITS GREAT.
and.. Applebees also told me that my personality is hard to resist.
yeah thats right..
so all you people who get annoyed by my talent..
PEOPLE LOVE IT <3
anyways. I go to orientation and training on Friday..
and then.
I start.
